  • Thanks, Never heard of PB2 either, will need to locate some. Sounds excellent for thai dishes but will help keep the caloric content down.

I absolutely love PB2!!! Stir fry sauce, topping for fruit or frozen yogurt (add sweetner and cinnamon with little additional liquid), smoothies as well as on bread. WONDERFUL stuff to satisfy your peanut butter craving without the calories.

Ok third time having this recipe and its still so good. Tonight was chicken, broccoli and tons of cremini mushrooms. Used the juice of half a lemon, 4 tbsp of PB2, 3 tbsp of lower sodium soy, 1 tbsp of sesame oil and 1 tbsp of sirracha. Whisked those together very well and added in the last minute of cooking.

    GREAT!!

Yes you can. I bought some of the regular and the choc PB2 online about a month ago. I made similar to this recipe last week and it was great although I missed the crunch you get in satay sauce when you use crunchy peanut butter or real peanuts so might add some chopped almonds for omega 3 and crunch next time.

 A coworker (and fellow MFPer) got me 'hooked' on PB2......love it to make thick sauces!! (In addition to adding it to oatmeal, shakes, any cereal, dip fruit in it, mix it in yogurt/cottage cheese etc). I've been thinkung of adding it to some soups.....debating if I should try it in some butternut squash/curry soup.......or pumpkin/curry.......
