egg white
egg yolk
peppers & onions sauted in coconut oil
salt pepper
saute the peppers and onions in a skillet with a little coconut oil in a medium heat until nicely browned, remove and fry up the eggs, add to pepper mixture. enjoy.

I make a mostly egg white fritatta which is yummy. Lightly oil a 13x9 baking dish (or spray) and preheat oven to 350. In a bowl beat 2 eggs and 10 egg whites. Add 1 cup of lowfat cottage cheese to eggs along with 1 teaspoon each of salt and pepper. Sautee' 4 cups of baby spinach and 1 package of white mushrooms, sliced. I do this with a smidge of grapeseed oil. When mushrooms are cooked fully, take off heat and cool. Then, drain mixture in a strainer or on paper towels. Layer mushrooms/spinach on bottom of pan and pour egg mixture on top. Bake for about 30 minutes uncovered or until middle is firm and cooked. Cool, then slice into 6 servings. It is easy to transport and reheat and makes a great lunch too! Each serving is about 135 calories.0

I also like them poached on top of steamed spinach, kind of eggs florentine without the muffin or the hollandaise.0 -
I like having a breakfast sandwich made with a whole wheat English muffin, one whole egg and one slice of cheese for breakfast. It comes to about 300 calories or slightly under but it keeps me full for quite a while. I toast the English muffin while the egg cooks up in a cup in the microwave. I do that in 30 second intervals before the egg is cooked to the consistency I want, it usually takes about a minute or so.0
