Thai Curry with regular coconut milk.

So I made red curry (using mae ploy red curry paste) and used regular coconut milk. Now I know it is super fatty to use regular coconut milk. Does anyone have any information about coconut fats? Are any of the fats okay for you, or are they all just bad saturated fats and I just lost a few years of life by eating red curry for a week?

Saturated fat is nothing to be afraid of and it is quite healthy for you.
MCT (medium chain triglyceride), which is what coconut oil is, is very healthy.0 -
thanks! I love red curry and a put loads of veggies in it along with some protein. I thought its achilles heal was the fat. but perhaps not!0

Coconut fat is one of the good fats. My nutritionist recommended using coconut oil liberally and not to worry about counting it as part of my calories when I'm restricing them.0
