Work Holiday Pot Luck Next Week....Help.

Hi everyone. I've got a pot luck next week and would love some suggestions for something healthier to take. The basic fruit or veggie tray is so boring. I also want to show them that you don't have to get just veggies when you want to loose weight. Anyone have any tasty recipes for finger foods?

You could try making some of these dips and provide a selection of thing to dip with i.e. rice crackers, celery, cucumber etc.

make a taco mountain lightened up!
take one lg container of fat free cottage cheese and add one large package of light cream cheese,,,,,,mix together well with mixer. To this add one package of low sodium taco seasoing.
Layer this on a nice plate and top with taco fixings such as light cheese, tomatoes, lettuce and peppers.
Surround the *mountain* with baked nachos and cut up peppers (cut into chunks for scooping)

cut up zuccuni w/skin and rub on evoo, and bake in dish at 400deg for 10 minutes
then sprinkle on tumeric, cumin and cayenne pepper
add diced up tomatoes, diced up cucumber, diced up red onion and bake again for 10 min until you like the zuccuni softness
I use romaine or some other style of lettuce shells or tubes to eat out of
if adding cheese freshly course parmaseam is good0 -
My work had a potluck recently and I took veggie pinwheels. I used the low fat garden vegetable cream cheese, filled them full of bell peppers, avacado, and whatever other veggies you'd like.0

Try Deviled Eggs! Adjust quantity as required.
Deviled Eggs
4 large hard boiled eggs, cooled and peeled
2 tbsp low fat mayonnaise (I substitute plain low fat greek yogurt)
1 tsp dijon mustard
paprika
fresh pepper to taste
2 tbsp chopped chives (optional)
Cut eggs in half longways. Remove yolks and put them in a bowl. Add mayonnaise, mustard and pepper. Stir well and pipe them back into egg white boats. (I use a ziplock bag for this and just snip off the corner, makes it super easy)
Top with paprika and choped chives.
Servings: 4 • Serving Size: 2 halves • Old Points: 3 pts • Points+: 3
