Breakfast Bars
based on Nigela Lawson recipe

300ml can of sweetened condensed milk
2.5 cups rolled oats
1 cup pepitas or other seed/nut, or a mix
1 cup dried cranberries
1 cup shredded coconut
(You could add a cup of nuts or something similar according to the original recipe, but I liked how this came out, with an extra gooey layer on the bottom!)

Put the condensed milk in a large microwave-proof bowl and heat until warm.

Add everything else and stir it together with a spatula.

Smear it all in a 9x13 pan, press it down even, and cook at 250 for an hour.

After it's cool, cut into 12 sections.

It keeps at room temperature, you can just cover with plastic.

I've been eating these all week and they are still very good, and definetly an excellent /time--effort--number-of-meals/ ratio.

    That looks like a good base recipe. I don't like coconut or cranberries though, but I think I can used substitutes. I love making my own stuff instead of buying packaged snacks.
