I started the insanity challgenge a month ago. I took a week off due to my knee hurting and popping. Then it ended up I took two weeks off due to getting sick. Now, I am two weeks behind in the first month. During the first week off I hiked up the Pikes Peak Incline. My knee no longer hurts.
I want to start it back up. Should I start all over. Or just start where i left off?
Whats your thoughts?

Start where you left off. If it's too much, go back a couple of days and try again.0

Just continue where you left off...ease your way back into it. Insanity is a Max Interval Training workout make sure your knees are ready for it, listen to your body. You will hear Shaun T. always say land softly because it's very important, do some form or routine exercise before doing the actual workout and see how your body/knee feels there's a big difference from feeling pain as oppose to being sore. Hope this helps

Congrats on doing Insanity. I did it back in 2011 and really got in shape. Than I went off course, I am planning on starting again, but not until next week. This week is crazy and I can't devote the time. I will be walking at least.
