Sharing a gorgeous delicious recipe for anyone with a surplus adn a taste for beetroot.:
Helathy Beetroot fritters
Grate 2 beetroot in to a bowl - use a mandolin if you have one to make matchstick type pieces rather than very fine ones.
Beat together one egg, seasoning, and a tablespoon of self raising flower.
Mix with beetroot and add 100g grated/crumbled firm cheese (I use low fat feta).

Heat a non stick pan and spray with oil . When just on smoke point add spoonfulls of the mixture and press flat with spoon.Turn after a few minutes, should be well browned & crispy. You may need to turn heat down after you add them to the pan.

Andre hates beetroot so I ate the whole lot! YUM!

    Do you peel the beetroot first? Do they have to be fresh beetroot or can you use tinned?

    What sort of seasoning do you add?

    Do you know the calorie count for the fritters?

    Didn't peel beet root. Don't think canned would work as they wet and vinegary! About 359 calls for that batch enjoy!

    Seasoning was salt and pepper but you can add whatever you like.
