    Roasted veggies
    Steamed Veggies
Corn and black bean salsa with tomato and avacados
Chicken noodles soup with mushrooms, spinach, celery, onion and carrots...

Love it grilled! Marinate for a 1/2 - 1 hour in some
balsamic vinaigrette made with olive oil.

I keep a few tupperware containers of chopped onions, peppers or mushrooms in the fridge. For breakfast I do a quarter cup of pepper, a quarter cup of onions and 2 ounces of diced ham...sautee in frying pan then add an egg and 2 egg whites. I use at least 2 veggies each time.

Adding a cup of vegetable soup to your lunch is another way to increase your veggies.

Made a turkey vegetable soup, that turned out killer.

Took some dark meat on the bone, 1 gallon water,
carrots ends, celery tips, bok choy, leeks, onions,
and bay leaf. (that's just the stock) Threw it in the
pressure cooker for an hour at 15 psi.

Then strained the stock, and added it to the big pot.
I used carrots, celery, bok choy, leeks, peas, baby corn,
mushrooms, broccoli, and No Yolk egg noodles, and
white turkey breast meat I had already cut up in to chunks.

I also used two boxes of Swanson chicken broth, and
a few splashes of low sodium soy sauce here and there.
I made almost 3 gallons. Not real high in sodium, and
it had a ton of veggies.

Kind of has an oriental tatse like a wonton soup!

    The stock!

    a bunch!

    Steamed broccoli, carrots, and kale.

Sauteed kale in a little bit of olive oil and garlic, finish with fresh lemon juice.

ETA: I've been making "salad in a jar" consistently for a few weeks now for lunch. I love it. Also got a BIG thumbs up from the nutritionist at my doc's office.

I make them on Sunday, and have 5 "grab and go" lunches.

Totally doing these salads in a jar!

A couple of people have PM'ed and asked for more specific recipes for "salad in a jar", and said I should post to the main boards.

    Here you go!

I LOVE LOVE LOVE my lunches now that I have them all ready to go ahead of time and don't have to think about what I'm going to eat every day. This week I've been supplementing with string cheese and a couple of satsumas.
