I really like this recipe (though I don't typically make the asparagus to go with it):

It's very flavorful! Even my bf (who is a picky eater and says he doesn't like fish... unless it's deep fried :( ) was able to enjoy a few bites of it :P
  • Yes. Baked or grilled. I CANNOT WAIT to get a gas grill. I'm grilling EVERYTHING. Ice cream and all. lol

I bake mine with balsamic vinegar, summer savory, parsley, garlic powder, and onion powder. Just a tablespoon or two of water in the bottom of the dish, cover, and bake at 375 until white and flaky.
  • This is one of those things that never gets old to me. I try a different seasoning every time! Once, I went with this spread...it was some mango habanero spread. I grilled up some pineapple and ate it all together. Sooo yummy!

I make mine in a small frying pan, with vegetable broth, not oil. I cook it on one side, then flip it carefully- season the cooked side with McCormick salt-free garlic seasoning blend and Italian seasoning.
I could eat it everyday. And I pretty much do. I alternate between that and salmon (cooked the same way).

Another way I do it is a small amount of reduced sodium soy sauce mixed in with the broth and once I flip it, I season with garlic powder and sprinkle sesame seeds on top.
  • Tilapia with Sundried Tomato Tapenade and Tilapia with Thai Inspired Veggies both yum!

that sounds good too.. but what is ceviche ?
  • I usually just bake it with some lemon-pepper seasoning on it.

thats what i usually do to... i use ms.dash sodium and salt free seasonings.. but im getting bored..
  • Try adding garlic salt to the lemon pepper and use extra virgin olive oil to bake it.

Uh oh...it's usually something you eat as an appetizer. The fish is marinated in citrus juices, usually lime and is somewhat like a pico de gallo. You can add shrimp or onion, peppers, tomato, a little garlic, salt, pepper...etc. You would eat it with tortilla chips. Goes really good with a margarita.

I just steam frozen fillets over chicken broth and then squish lemon over them.

    blackened

get tilapia filets at room temperature (very important)

rub very lightly with olive oil (the kind for frying not extra light kind)

coat entire filet liberally with cajun spice

get iron skillet HOTTER than HELL

    grill the filets briefly

I do about 6 filets at a time...dang...I love it

This is one of my favorites; I do it with Tilapia, Salmon, Mahi Mahi, or Ono:

    http://www.eatingwell.com/recipes/salmon_roasted_with_tomatoes_olives.html

I'm usually only cooking for two, so when the vegetables are done roasting, I take half of them and put them in a freezer bag and freeze and continue on with the recipe halved. When I want to have it next time, I've already got the hard part out of the way and just pull the freezer bag out and don't have to worry about roasting the vegetables. They freeze pretty well...little different the second time around, but still very good.
