Spaghetti Squash--how far is too far?

Though it's taken me a little while to come around, I am totally loving spaghetti squash with tomato sauce and parmesan cheese (I microwave each half for 6 minutes with a little olive oil and garlic) but I'm wondering how far I can go with this noodle substitute. I love Asian-inspired soups and it seems like spag. squash would be a great stand in for vermicelli noodles, does anyone have experience using it in soups?

I cut it in half, scoop out the seedy part, add some garlic and evoo and throw each half in the microwave for 6-7 minutes then scoop it out and top with tomato sauce and parmesan. It's yummy and super low cal. And each squash is like $1.49 and at least two servings, I usually get three. Give it a try for sure!!0

We love it roasted in the oven. This week, we had it as a side to roasted chicken. All it needed was a little salt & pepper! It's also great with a wedge of Laughing Cow cheese stirred in while it's hot. Our favorite recipe is the spaghetti squash & tomato bake from greenlitebites.com.0

I had it with Alfredo it it was pretty awesome. Wanting to go farther too but I am afraid one recipie will make me dislike it lol0

I think as long as you don't start shoving it up your butt, someone else's butt, or doing other inappropriate things with it, you should be good.

Are you buying it at a farmer's market for that price? Even at one of my fresh farm stands it is .89/pound. At the grocery store it is $1.29/ pound. Each spaghetti squash is about 3 pounds. I LOVE them!0 -

Let us know how it turns out in an Asian soup if you try it! I like it but haven't experimented much with it. I like Acorn squash much better but would be willing to try more recipes if you find something that works! Cheers0 -
I've been eating spaghetti squash like I eat my salads - as a base. Then I throw in everything from shrimp and mushrooms with garlic sauce to a Vegan Boca Burger with my thai sauce (made with soy and PB2).0

I have never had spaghetti squash before. I love pasta of all kinds but I have never enjoyed the taste of squash (any kind that I have tried). What kind of flavor does spaghetti squash have? I would like to try it but I would hate to have to toss it out if I find I don't like it (hate wasting food...probably why I'm so fat in the first place)!0

bump because I am curious if anyone has tried it in soups too. Love spaghetti squash with just about everything but haven't tried that yet. Would be awesome if it worked.0

Thats so funny because I made spagetti squash with an "Asian" flare last night! I sauteed some veggies, put in some leftover grilled chicken, added some peanut sauce and the spagetti squash noodles ~ it was GREAT!0

I've been having a love affair with spaghetti squash lately. I love how low cal/low car it is and it makes me feel like I'm eating something much more substantial than just veggies and a protein.

My husband has replaced noodles with spaghetti squash in his Pad Thai recipe and it's gotten to the point where we prefer it over normal noodles. I think it'd work really well in soups so long as you add it at the very end as to not overcook it.0

I've never used it in any Asian dishes. I always eat it as spaghetti. I love it with spicy turkey sausage, peppers and tomato sauce. I also love it with chicken breast and mixed veggies (broccoli, carrots, green beans) and tomato sauce, and of course just with tomato sauce. Yeah--tomato sauce theme.
Let me know if you try it in a soup. I'd be interested in that. I would think that you would have to cook the soup separately and add the "noodles" at the end.0 -
The prices remain pretty consistent around here (Atlanta) whether I buy from a chain-grocery or a Farmer's market.0
