My favorite:
Cube chicken breast (1 inch cubes)
Lightly dust in chili powder, lemon pepper and salt
Pan fry in olive oil
Deglaze pan with a little white wine (1/4) and lemon juice (2 tbsps)
Pour sauce over chicken, serve with hummus for dipping chicken pieces into and sauteed spinach or kale or asparagus0 -
This isn't just chicken breast, but I like to use chicken to make fajitas (my husband is Mexican so it's always spanish food haha) anyway, if you saute it with peppers, onions (I add zucchini usually too), and then leave off the cheese and sour cream (the kids can have it!) and use romaine lettuce instead of a tortilla it is AMAZING and so incredibly low calorie.

I marinade chicken in extra virgin olive oil and garlic with some Montreal Chicken spice for a couple of hours or a day. Then I bake it in the oven. It's nommy!0

Not sure if this is your taste, but it's made using skinless boneless breasts and is tasty and different -- and you get servings of fruit in along with the chicken, so it's well-rounded:

There's also this, which I haven't tried yet but plan to the next time I have all the ingredients on hand. It's baked on a bed of zucchini and yellow squash.

I always like chicken tostadas.
You boil the chicken breasts and shred
put olive oil mayo on a tostada shell
put on shredded chicken
onion
radish
avacado
cilantro
They are one of my favorite things to eat and super health0 -

This is a fave of mine for quick and easy -
4 frozen chicken breasts (must be frozen)
1 cup either water or chicken broth (I prefer broth)
1 package Italian seasoning (the kind you make salad dressing with)
Dump all in crock pot and cook on low 6-8 hours. It won't look like there's enough liquid to cover the chicken; that's why you use frozen chicken. It's so tender when it's done! I use the leftovers to make the best chicken salad as well.
I serve with a salad or green beans.
