Somewhat homemade tomato soup… I use Campbells condensed, use 3/4 can skim milk, the balance I use creamer (i like the richness) and I add diced tomatoes and spinach. Lots of pepper and a touch of sea salt. Yum yum yum!

Grilled pork chops marinated in my special spicy garlic thyme marinade, grilled sweet potatoes and grilled zukes.

ETA: That's boneless center cut pork loin chops to be specific.

Kale and white bean tacos with cheese. A glass of Sauvignon Blanc (or two).

If I'm craving it, blue bunny no sugar added ice cream for dessert.
(If hubby eats it, I prolly will too).

I'm having salmon, mashed potatoes, and brussel sprouts. My mom and substituting salmon for pork chops.

Love that meal combination! Had it mysef not long ago.

I had boiled fish with mushrooms, potato, carrot and swede mash and a vegetable mix of broccoli, spinach and butternut squash. Oh, and some apple and plum christmas chutney.

ginger steamed fish with hana sauce...roasted broccoli...roasted new potatoes.

I gotta say...and it's easier said than done...but planning my dinners for the week on a Sat or Sun and then doing all of my shopping have gone a long way in helping me on this journey...I always know what I'm going to have (but I might mix things around) and I pre-log my day so I know exactly where I'm at, at all times. Like I said, easier said than done...but it's really helped me.
This is a GREAT idea! I think I will do this! Thanks for the great tip!

I'm having a 'mom has had a day and can't be arsed to cook' kind of dinner. Grilled cheese sandwiches and tomato soup, with Goldfish crackers for the kids.
