BEST HOMEMADE Fajitas!

Fajita Seasoning Mix:
1Tbs cornstarch
2 tsp chili powder
1 tsp salt
1 tsp paprika (smoked is better)
1 tsp sugar
3/4 tsp crushed chicken bouillon cubes
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp cumin
Combine all in a small container. Use as needed in recipes calling for fajita seasoning mix.
2 Tbs mix plus 1/2 c. water for cooked meat fajitas.
I double or triple this recipe and keep a container in the cupboard at all times.
For fajitas I grill two chicken breasts on the Foreman grill, allow to cool slightly and then slice thinly. While chicken is cooking I sautee one onion, one red pepper and one green pepper in a skillet. Add the chicken, 2 tablespoons of the mix and a half cup water and simmer 3-5 minutes. Serve in your favorite burrito shell with a little cheese, sour cream (or not) and guacomole. YUM!
The leftovers make an excellent topping to a lettuce salad the next day too!
