I have a pack of small pollock fillets in the freezer, 6 in total, and need some healthy recipe ideas for them. So, any takers?

  • Easiest I know

line a cookie sheet with aluminum foil, little bit of olive oil, put the fish on the aluminum foil, squeeze lemon over the top, sprinkle black pepper over it, bake until fish breaks apart flaky..... Yum.

I've used this easy recipe on a few flaky white fish types (Haddock, Halibut, Hake, Cod) thus far and it's outstanding on every one.

I substitute in Daisy light sour cream and Fat Free Nayonaise in place of the mayo. Fresh chopped dill and green onions.

Depending on how big the filets are, 1 cup of all the stuff mixed will cover 6 (6oz) filets easily. Oven on 475, cook for 20-23 minutes until you start to see some nice golding on top then yank out and serve. It's a nice 60-80 calorie topping that tastes delicious. My family asks for it almost weekly now.
