What's the best way to see a difference?
Weigh-ins?
Monitoring your measurements?
Using a pair of jeans to aim towards?

All of the above! Plus some before and after pictures help as well.

The weight loss is wonderful, but I've been shocked at the way my measurements have changed.

Measurements and once you are at a great place with that (stops changing significantly) then just looking in the mirror, photos, clothing fit.

Right now I only use weight to chart my progress, but I also have pictures of myself at my highest weight. I plan to take a picture everytime I lose 50 pounds :)

I'm a huge fan of measuring. It's advisable to measure monthly but I measure weekly on my weigh-in day. On weeks that I know I've managed the eating/exercising well, yet the scale doesn't move, the measurements will show progress. There are many weeks where that is the only thing that keeps me motivated. The jeans-fitting will fall in nicely from there.
