My own recipe...just made them and they turned out perfect! I never thought no fat or sugar added could taste so good.
Ingredients:
8 extremely ripe bananas
2/3 cup unsweetened applesauce
6 egg whites
1.5 cup slivered almonds
1 cup oats
3 cups whole wheat flour
1.5 tsp baking powder
0.5 tsp baking soda
Directions:
Preheat oven. In a large bowl, blend bananas on low speed with a hand mixer. Add remaining ingredients and blend on low speed until completely blended. Blend on medium speed for 1 extra minute. Spray muffin pans with non-stick cooking spray. Spoon batter into pans. Bake for 25-30 min at 350 degrees. Let muffins cool in pan for 5 minutes and remove from pans.
I highly recommend that you put 1/2 tbsp of reduced fat peanut butter on top, so delicious!

These sound great but if I wanted to use the whole egg instead of just the whites, do you know how many I would use? I'm thinking 2 maybe?0

OMgosh, thank you for posting this. I have about 6 very ripe bananas at home right now and I was hoping to find a good recipe to use them in.
And like the poster above, wondering how many whole eggs instead of whites anyone thinks this recipe would take?0 -
