Egg Muffins

Saw this on Pinterest!!!!

4 Eggs (I used egg substitute)
2 scallions (aka green onions)
Weight Watchers cheese stick (chopped)
I/8 cup of chop onions
1 tsp dry mustard
1/4 tsp salt
1/4 tsp minced garlic, dry
dash of pepper
Red pepper flakes (optional)

Preheat oven to 375 F. Then, pour mixed ingredients into muffin pan or silicone muffin cups, filling each muffin cup 3/4 full. Bake for 25-30 minutes or until egg is set. Let cool 10 minutes and then gently pop the muffins out of the pan. If you are using silicon muffin cups, just leave the muffins in the cups until you are ready to eat them. The muffins can be stored in the fridge in a plastic bag for a week.

Mine came to be about 53 calories per muffin!!!!

    How long do you reheat the ones you put in refrigerator?
