Love, love zucchini. I am always looking for new ways go incorporate this in my diet. My favorte way to use zucchini is to slice thin strips lengthwise, season accordingly, and bake until slightly dry and then use in place of lasagne noodles when making lasagna using ground turkey. I get special requests from my family for this dish.0
