I used this recipe as a model but mine were way more potato-ey and less beany:

Sweet Potato Veggie Patties (makes 2)
1/2 cup 6 bean medley (mashed)
1 medium sweet potato, baked/peeled/mashed (I actually tossed it in the microwave)
2 tsp brown sugar
1 tsp mild curry powder
1/2 tsp garlic powder
3 tbsp wheat flour + additional
to taste: cayenne, black pepper and salt
Safflower oil for pan
Directions:
1. Mash beans and potato together.
3. Mash in all seasonings and flour.
4. Heat 2 tsp safflower oil in a pan over high heat.
5. Form 2 patties from mixture and dust the top and bottom with flour.
6. Then drop the patties in the pan. Cook until browned on both sides.
7. Let cool and serve as desired.
I just had mine on one slice of whole wheat toast, with miracle whip (barely half a tsp), chopped onions, spinach, about 1/4 of an avacado (sliced) lots of lime juice,
It was absolutely DELISH.
The patty itself has 202 cals, 5 grams of fat (mostly from the oil, so they are good fats! but you can use a spray maybe instead to cut back), 34 grams carbs and 6 grams protein.
I had two the way I described for supper for about 600 cals!
YUM
