Ravioli Lasagna

I found a recipe in a magazine and finally tried it last night and it was amazing!!

Ingredients:
1-20 oz bag of cheese ravioli, thawed
1-10 oz box of frozen spinach (thaw and squeeze out the water in a towel)
1 1/4 cup of your choice of spaghetti sauce
2 mozzarella cheese (I used regular but if you want you can use low fat)

Preheat oven to 350°. Spread 1/4 cup of sauce in the bottom of the casserole dish. Then layer 1/2 of the ravioli, the spinach, 1/2 cup of sauce, 1/2 of the mozzarella cheese, the other half of the ravioli, the rest of the sauce and the rest of the cheese. Top with parmesan cheese. Bake covered for 40 min, then take aluminum off and bake for another 15 min.

    Wow, so simple but sounds pretty good! And I bet if you wanted some meat in it you could mix in some beef ravioli.

    Or 1/2 lb or 1 lb of ground beef or turkey. It was really easy. My 16 year old son made it. He loves to cook so I got all the stuff he needed and he made it. And it's really inexpensive to make too. That's why I made it. We're trying to save money on groceries so I'm making more meatless meals.

    I love making this and do it all the time! One thing I do differently - I throw everything into the biggest bowl I have and stir it all together. I don't thaw anything ( I buy frozen chopped spinach in a bag) and I dump it into a pan and bake it until it is bubbly. Just remember, it is going to take a while to bake! MMMMMMmmmmmmMM!

    "casserole dish" <~~ what size? 8 x 8 or 13 x 9 ?

    Made this tonight with fresh spinach--probably better to use frozen because you can fit more spinach between the pasta layers. Nonetheless, it was *really* good!

    Use a big pan - 13 x 9! This has been my favorite way to sneak spinach into my kids diet!

    This sounds delicious. If I can find some whole wheat ravioli I will eat some, if not I will feed it to my extremely picky grandsons and husband. :drinker:
