            Do you peel the zucchini first? Or leave the skin on? does it matter? What does everyone prefer?

            Yum! Can't wait to try these! I have two kids with severe egg allergies, so when I bake I replace eggs with milled flax seed. 1Tbsp milled flax seed + 3 Tbsp water = 1 whole egg. You don't taste the difference, and flax seed is so healthy (great omega-3s!)0

            Made these tonight. They are quite tasty and easy to do. I also used a baking pan rather than mini muffin tins, so clean was a snap too. Great family fun dish.0

            Replace the zucchini with shredded cauliflower, add a tablespoon of mild curry powder
Follow the same recipe and timings
They are amazing! Ok it takes calorie count up to 30 each. But they taste Sooo good.

            They freeze very well, defrost thoroughly, re-heat at 200celcius for 5 to 7 minutes.
I open freeze in baking. Parchment then decant to an airtight container. Keep happily for 3 months in freezer.0 -

            I made these last night and they were really yummy. Went and bought a mini muffin tin JUST to make these. I didn't have bread crumbs so I threw a few saltines in the food processor and used those. Even my vegetable hating husband loved them.0
