No Bake Energy Bites (with PB2)

These are amazingly good. You could even use peanut flour in place of the PB2 and the calorie content would remain approximately the same and reduce the sodium content since peanut flour is sodium-free! :bigsmile:

• 6 tablespoons PB2 (prepared with 3-4 tbsp water)
• 2/3 cup (dry) oatmeal (old-fashioned oats)
• 1/3 cup chocolate chips (mini chips work best)
• 1/3 cup ground flax seed
• 1/3 cup coconut flakes
• 1/4 cup honey
• 1 tsp. vanilla

Directions:
In a medium bowl, mix PB2 with water (6 tbsp PB2/3-4 tbsp water),blend well.
Add the remaining ingredients to the bowl and stir until thoroughly mixed.
Let chill in the refrigerator for half an hour.
Once chilled, roll into balls of about 1″ in diameter
Store in an airtight container and keep refrigerated for up to 1 week.

Makes approximately 20 1” balls.

    I make these too!!! So good!! usually skip the coconut to shave the cals but I LOOOOOVE these! The chips give it just enough sweetness!

    Thats PER piece!! ~60cals is a lot for that small of a bit

    What's PB2?

    Its basically dehydrated/defatted peanuts that have been roasted and ground into a powder. It has a nice peanut taste, but you mix it with water so its waaaay less in calories and fat. I like it a lot. Great for mixing in smoothies.

    I just got some PB2 both plain and chocolate. Both are very good. I bet these bites would taste great using the chocolate or adding some unsweetened cocoa powder to the recipe. Then u could omit the chocolate chips and add some chopped up nuts like almonds.

    I make these all the time but with real PB,I don't skimp on that ingredient. They are delicious!
