What's for dinner tonight?

I'm in need of some new clean ideas for dinner. Tonight I am having long grain brown rice, topped with 2 tbsp fat free sour cream, chopped tomato and green onions. Yummy!

There's a chicken roasting in the oven right now. It's stuffed with lemon slices, and there's olive oil, S&P and garlic powder on the outside.
We're also having sauteed guy lan (Chinese broccoli) with ginger, and mashed cauliflower.
...Oh and we WILL be eating the skin!0 -
Baked deviled fish, sweet potatoes sauteed with kale and onions, and red lentil soup. Or maybe a bacon broccoli quiche with baked acorn squash. Or leftover bbq pulled pork sandwiches with cabbage salad. I am really indecisive today...0

Must be the day for chicken. We have two chickens on the rotisserie grill. Along with it will go roasted cauliflower and homemade bread that my hubby made. No skin for us, though, my hubby skinned the chicken before he cooked it.0

I had sauteed vegetables (green beans, baby corn, two servings from a bag of stir fry veg) with beef and prawns (shrimp), made a really fast sauce from Thai curry paste (jar) and coconut milk powder. I also intended to add peanut butter but forgot! I use dry spice blends or pastes for any South or East Asian food because the ingredients are higher quality and cheaper than the ready made jar sauce.
I do a fair bit of sauteeing four different vegetables and adding a flavour - Greek yoghurt and grated cheese is awesome over bell peppers, red onion, mushrooms and tenderstem broccoli.0 -

Tonight I made made stuffed eggplant.
Washed and dried the eggplant.
Split down center.
Brushed with oil ( I used clarified butter) sprinkle with salt and pepper on cut side.
Roasted cut side down in oven on foil lined baking sheet @ 400 for about 45 minutes - until fork tender.
While that was happening I put together the stuffing.
I used what I had around, but you can really fill them with what ever you wish.
browned crumbled Italian pork sausage
spicy red pepper pasta sauce
minced onion
fresh mushrooms
clove garlic
black sliced olives
capers
shredded Parmesan cheese
I took some oil ( here I used rendered bacon drippings) and sliced and sauteed the mushroom,onion,garlic.
After that was cooked down I tossed in the sauce till heated thru then added the capers and olives.
Salt and pepper to taste.
When the eggplant was done I flipped them over and pushed the flesh to both sides starting in the middle with 2 forks to make a little well for my delicious filling. Topped with cheese back in the oven for 10 minutes to toast the cheese. Let cool for a minute then devour! Yum! I still have another eggplant left so I'm going to make this again.0 -

Grilled herb rubbed chicken breasts, steamed broccoli, red butter potatoes. I wanted to do roasted broccoli, but I don't have the calorie allowance today for the olive oil...ok though...I had an awesome breakfast.0

Seared Salmon with Sweet Potatoes
300 calories per serving, 31g protein, 22g carbs, 9g fat, 4g fiber,430mg sodium
~1lb sweet potatoes, peeled and cut into 1/2 inch cubes
~1 bag (6oz) baby spinach
~4 pieces of boneless, skinless center cut salmon filets (5oz each)
~1/8 tsp cayenne pepper
~1 lemon
~1 cup dry white wine
~2 tsp capers
~1/4 cup fresh chopped parsley
Microwave the cubed potatoes in 1/4 cup water, 1/4 tsp pepper and salt. Cover with plastic wrap on microwave on high for 8 min or untill soft. Add spinach and recover and micorwave for another 2 min.
Sprinkle salmon with cayenne and a pinch of salt. In a nonstick skillet on medium, sear the salmon for 10 min or untill it flakes easily turning over halfway through. Transfer to plate.
From lemon, finely grate 1/2 tsp of the peel onto fish. Squezze 1 tbs of the lemon juice into a cup.
To skillet, add wine and capers. Boil over high heat untill liquid is reduced by half, scraping brown bits from bottom. Remove from heat and add lemon juice and parsley.
Divide potato mixtures onto plates and top with fish. Spoon sauce over fish.

Taco Soup! My recipe includes...
-1 can corn
-1 can light red kidney beans
-1 can red beans or pinto beans (I've been using red beans)
-2 cans of diced tomatoes
-1 small can green chilies (or buy two cans of tomatoes with green chilies in them instead)
-1 onion, diced
-1 packet taco seasoning
-1 packet ranch dressing mix
-1 pound (give or take) of lean ground beef (ground turkey would probably work too, but I haven't tried it that way)
Brown your meat up, then drain. Add everything else and bring to a boil. Garnish with cheese, fritos corn chips, sour cream, and whatever else you may like for taco-style stuff (a friend used guacamole as well). Delicious, filling, and decent on the calorie count. It's one of my favorite soups0 -

baked chicken breasts in panko, german wild chive flavored egg noodles and fresh cooked spinach with a shake of parmesan on top of the noodles with a little pesto..fan freakin tastic!0
