I have totally switched over to ground turkey. To make the switch easier, do 1/2 beef and 1/2 turkey. Use half or a 1/4 of the seasoning so you dont have a lot of sodium. I use 1/3 fat sour cream, avocado, all kinds of veggies, low fat cheese and fat free refried beans. Do it as a salad and save yourself the carbs on the shell or tortilla. Or use the high fiber low carb one. Mission has a good one and so does Archer Farms (Target Brand).
    Good luck

Like someone else suggested, fish tacos rock! We spice ours up with homeade pico de gallo (tomato, onion, jalapeno, lime juice, cumin, S&P), and sliced avocado, all rolled up in corn tortillas. Yum-O (and easy-peezy)! I've never tried it, but someone told me you could even use fish sticks in these....
