Picky Eater Troubles!

I am getting ready to go low carb (not no carb) and need help with easy snack and lunch ideas to take to work. I am fairly picky and I'm struggling coming up with ideas of what to eat so that I'm not eating the same thing everyday. Any ideas would be greatly appreciated!! Thanks!!

  • Chicken salad for lunch is one of my favs. I fix a small can of chicken with light mayo and relish and it's only about 200 calories. Then I pack shredded lettuce on the side and eat the lettuce with the chicken salad instead of bread. It's not too bad.

    I like green leafy salads with lots of different toppings, from sliced meats/fish/fowl and eggs to grated cheese to beans

  • I make a real easy lunch chili on Sunday for the week

    1 small can V8
    1 can chili tomatoes
    1 can black beans
    1 can corn and green peppers
    cummin and chilli powder as needed to spice it up

    I put this all in a big pot on the stove and let it simmer about 10-15 min. Then scoop it into four containers, two stay in the fridge and two go in the freezer for letter in the week.

    I have also added meat to the recipe. For example we had left over chicken taco meat last week and I put it in the chilli when I warmed it.
