Morning

Does anyone have any new suggestions for mushrooms - any type/any meal would be fab, I've become very monotonous with omlette/adding to pasta!

    large flat type - drizzle with a little olive oil salt and pepper tablespoon of low fat cream cheese i use the one with garlic and chives and bake for 8-10min in hot oven

    chopped tomato garlic as above

    these make a lovely starter im off to work but will post a few more later

    I think I'll have to try this tooo :)

    with the large flat type, I cut out the stalk and back them with flavoured cous cous and a bit of halloumi

    with the dinky button mushrooms I pan fry thm and stir in low fat cream cheese (garlic & chives as above!) and then that can be used for stirring through pasta or topping a baked chicken breast

    other than that just good plain dry-fried mushrooms on toast!

    I make mushroom + leek risotto with barley instead of rice. It's amazing.

    I just cut them up - fry them in some garlic butter, sprinkle some thyme over - and a pinch of salt.....
    Great with steak, chicken - or on its own

    I love sauteing sliced mushrooms along with some shallots and lots of garlic, and then just eating it with whatever. I like to make little wheat germ cakes and topping with some Greek yogurt (spiced, maybe like tzatziki or something), the sauteed mushrooms and then whatever veggies I'm in the mood for (tomatoes, bell peppers, lettuce...). This also works great with any protein. It's especially delicious with fish, again with some Greek yogurt and one of my favorite sides - sauteed pears and onions, with nutmeg and lots of black pepper.

    Another fantastic side, especially with red meat, is sauteed mushrooms and sugar snaps. You need to give the mushrooms a good head start, though, since the sugar snaps should be nice and crunchy.

    Then of course, there's stuffed mushrooms. Any kind of cheese is awesome inside a mushroom cap, roasted or grilled.

    Hope that gives you some ideas.

    - use the mushrooms as a base and top them with what you'd put on a pizza. esp great if you use big portobello mushrooms
    - spritz with a teeny bit of oil, and grind rosemary with a lil bit of salt and bake to have with meats
    - bbq with a little miso paste

    Stuffed mushrooms! I use ricotta cheese and mozzarella with my favourite vegies :)
    Also love it on homemade healthy pizza :)

    Mushrooms are on of my favourite things ever. I put them in everything.

    General steamed vegetables, something green, some kind of root, something 'sweet' (capsicum) etc, something from the onion family and mushrooms. Chop a bit of it all up steam and put pesto/gravy/splash of oil/herbs on mmm yum!

    I put them in dumplings tofu/carrot/cabbage and make dumpling soup with bok choy and miso and bean sprouts or just eat the dumplings steamed.

    I put them with kidney beans, corn, jalepeno, tomato and fry them up 'mexican' style and eat them in lettuce cups.

    Chuck them in stir frys, fried in large slices as a sushi filling. Put them cooked or raw in salads.

    You can do endless things with the humble mushroom :)

    Mushrooms are my favorite food.. I have them for breakfast most days, usually sauteed with green onions, garlic, greek yogurt, and a little soy sauce. Or quartered and baked with balsamic, garlic, and rosemary or tarragon. Pickled mushrooms are great if you like that sort of thing, you just boil them in vinegar and water for a few minutes, with whatever spices you like (I use garlic, bay leaves, cloves, and chili flakes), then refrigerate. I make mushroom pate with fresh goat cheese (easy to make yourself) and spices, and wild mushroom soup (garlic, shallots, white wine, yogurt) whenever they're available fresh.

    Here is such a simple one - slice or chop the mushrooms, cook in a little milk until soft then pop in a tablespoon of low fat Philadelphia - low fat plain or with garlic and herbs - let it reduce a little until creamy. I use this instead of meat with veg, or with pasta.

    Another thing to replace potatoes - cook swede, carrot and parsnip and when soft mash - don't use any butter or oil just mash together. Colourful and healthy

    I love them sauteed with a little reduced sodium soy sauce. It's probably my favorite side right now.

    We typically buy a box of small canned mushrooms every month or so... a can gets added to almost every dinner, and a lot of lunches as well.

    The big mushrooms I stuff with low fat ricotta and pinenuts and then grill.

    Smaller mushrooms I slice up and use as a homemade pizza topping, or use a jar of hot tikka masala sauce to make a mushroom curry.
