    As a side dish, I sautee them in a spritz of Pam, then add either a bit of red wine or a a couple of teaspoons of a good balsamic vinegar. Taste delish!

    I like to make grilled chicken breasts and then top with mushrooms and cheese. I usually put the mushrooms in a small pan to heat them, then put 28 g of shredded cheddar over them until it melts. Then, I put the cooked chicken on my plate, topped with the mushroom / cheese combo.
  • Mushrooms sauteed in olive oil w/soy sauce, roasted red peppers and onions is great on top of a baked potato. Yummo!:smile:

    I keep seeing recipes for mushroom pizza. Instead of a crust they use big portabellas! Talk about yummmm

    *BUMP* but also just read a recipe for portabella caps

    cook ground turkey and mix with other veg that you would put on a pizza with some sauce, fill the cap and put some cheese on top.
    You could also taco fill them

    I marinate Portabella's in a mixture of Worcestershire and soy (and whatever spices I have on hand) and then grill them, almost like a steak.

    For someone that hates to cook (me), I usually just stir fry with olive oil, onion and garlic.

    Portabello Mushroom Melt

    Mist portabello mushroom with olive oil and set atop a thin layer of minced garlic. Place desired amount of mozzarella cheese on top and set in oven to broil. Broil until done (however you prefer.) You could also cook the portabello on the stove in garlic first and then melt the mozzarella cheese. Mix salad greens with balsamic vinager and red onions. Place on top of the mushroom. I prefer to use the Rosemary Olive Oil Flat Outs, but you could use any type of bread (ciabatta or other type of dense bread would be really good.

    calories depend on type of cheese (I use 2% shredded) and type of bread. If you use 1/4 cup or less of 2% shredded mozzarella and the flat out bread, you are looking at right around 200 calories for the huge sandwich.
