Vegan Banana Split Cookies

I just have to share this with all of you. I got a recipe on here for "two ingredient cookies" a while back and I liked them well enough. I have made them a few times and finally I decided to make some alterations. What I came up with is a vegan (I am not vegan but I have some friends that are) chocolate banana split cookie. It tastes A-MA-ZING!! I'm so glad that i have a little background in the culinary arts.

    OK, here ya go. I made a big batch (because I like to share) so you can cut this in half if you want.

    2 cups of uncooked oatmeal (I use the Walmart brand)
    4 small bananas - a little old/brown is best
    1/4 cup of Ghirardelli Sweet Ground Chocolate and Cocoa (you could use another brand or omit this part if you want)
    1 tbsp of vanilla extract
    1 tbsp of almond extract
    1 1/2 cup of pineapple chunks (more or less as you like -- but if you use more then you may have to add some extra oats to keep it solid enough)
    2 jars of cherries (1 jar wasn't enough to do all the cookies)

    Preheat the oven to 350F.

    Blend the bananas in the food processor until they are 100% pureed. Add them to the 2 cups of oats in a medium size mixing bowl. Add in the 1/4 cup of cocoa powder, vanilla and almond extract. In your food processor, pulse the pineapple chunks until they are extremely small bits (do not need to puree it, just chopped super well). Add this to the rest of the mixture. Mix with wooden spoon (or whatever) until well blended.

    I then take my small portion scoop and as accurately as I can, I scoop out the cookie onto a cookie sheet. I do not flatten them yet. Once I get the cookie sheet filled up, I then take my drained and rinsed cherries and push one down into the center of each cookie. This will flatten the cookie out to the shape you saw in the picture. Bake them for 15 minutes at 350. When you take the pan out, it will be hot so do not be stupid like me and burn your thumb. I yielded 50 cookies on the above batch. 35 calories per cookie is what I figured up...

    Yeah, it's a lot, but I like it. I like a lot of flavor. If it's too much for you, you can always cut it in half. :)

    I brought them into work today and so far the 6 people that have tried them, LOVE THEM! One of those people is my supervisor (he's vegan) and he NEVER eats anything that other people bring into work....he ate 5 of the cookies! I call this a success! :)

    oh its not to much flavor haha i put extraxt in my protein shakes for extra flavor lol
