    It's cauliflower put through a food processor until it has a rice-like texture.

    I am not sure if it can be or not, but you could sub the oil for no calorie cooking spray or if you have a pan that is very non stick.

    It should keep up to a week.

    I've only just got into cauliflower as an alternative to potatoes and I eat so many eggs a week that this idea is perfect for me.
