"cheat" foods that aren't

I've seen some posts about 2 ingredient "cookies" that are basically oatmeal and a banana and others about using a frozen banana for mock ice cream. I tried googling for some other ideas like this, but didn't really find anythng. Does anyone have any other ideas? I think I saw a chickpea something or other, but I can't remember what. I'm all for quick, easy, tasty, healthy ideas. Thanks!!

Roasted chickpeas is another idea, and Kale chips. Homemade popcorn is another.

Chickpeas / garbanzo beans can be thrown into a food processor/blender to create hummus.
Got to add a couple of things like a little olive oil, touch of vinegar and some garlic, then whatever you like to taste. Sometimes a touch of water for consistency.

Every cookie type of recipe I have tried like that was awful. I think cookies need some flour and sugar or else they are just mushy garbage based on the ones I tried.0

Pancakes:
2 eggs and 1 mashed banana. Mix and heat up in a pan. Delicious!0 -

i highly recommend hungrygirl.com for all kinds of recipes but she does a lot of single serving and 1-3 ingredient recipes that are great0 -

That made me laugh! I'm looking for new ways to have healthy fruits and veggies. Not so much a cheat - just satisfying a craving with a healthier option where a good one exists.0 -
I have a recipe from my sister-in-law (who runs triathalons) for Protein Bars. They are good, easy and make a 7x11 pan (15 servings or more) One bar will fill you up for hours. Here it is: 1.5 cups of old-fashioned oatmeal (uncooked), 1c. natural peanut butter, 2/3 c. agave nectar or honey (we use half honey, half agave) 2 scoops vanilla Whey Protein Powder, 1c. seeds or nuts (we mix seeds and nuts). Put those ingredients in a bowl, stir it until ingredients are mixed and moist. Press them into a 7x 11 pan. Cut into bars and eat when ever your ready. They are ready immediately. I usually cut and wrap them all, then leave them on the counter to grab whenever we need a quick snack. We think they are tastier and much cheaper than a box of processed snack bars.0

1/2 c. greek yogurt ( I think the nonfat is nasty and the texture is wrong, go with lowfat or traditional)
2 tsp honey
1 tsp cocoa powder
Mix those all together and then top with 1/2 c berries
OR
1/2 c greek yogurt with 1 Tbsp sugar free jello pudding mix
