    I am with you. although I have been juicing kale and stuff lately, and despite washing well, it totally messes w/ my system, which I think might be low doses of bacteria that just can't be eliminated w/o cooking....at least that's my current thinking...

    Yes soil content varies nitrate levels, type of fertilizer etc. Also hot house grown veggies in the winter seem to have higher content than other veggies

    Funny you mention hothouses. My mom was yelling at me for eating salad in winter. Seriously. Her arguement was the soil in hothouses and that mass produced hothouse salads from Spain or from other continents flown in are poisenous. It does make you wonder what are they putting in the soil to keep this stuff soooo fresh by the time it gets to your table.

    Your mom is a smart lady, green leafy veg grown in hothouses have been shown to have much higher nitrate content

    Oh dear I am in trouble! I just posted telling someone to eat lots of green veggies! Lol. Oh well I haven't got cancer yet and eat them by the bucket load! I'll carry on as it's a big aid in my weight losses.

    The ironic thing about my mom is that she is also overweight and lives off of bread, coldcuts and yogurt. If veggies then potatoes. I was making a salad while she was visiting and she was making a sandwich. She knew I was trying to lose weight. Her comment on the hothouses was in defense of her eating. " just because you are eating a salad doesnt mean your meal is healthier than mine". Hence the whole if you only knew what was in your salad thing.

    I think I'll be ok...I always have my leafy greens wilted with a shot of cider vinegar and some raspberry ketones.

    What if we pre-soak our greens in Red #5 food coloring? Will the chemical reaction between that and the nitrates be enough to make these veggies safe again? And will it cause my kids to want to eat green beans and peas now that they're not green any more?

    Try washing them first.....get a spray bottle and put 1/2 white vinegar and 1/2 water. Spray and let it sit to kill the bacteria. No need to cook them. I then lightly rinse, but you don't have to.

    Not kidding here. But I do recall preparing some veggies in some way can increase nitrate levels to unsafe levels. . Learned this from a baby nurse who was giving a seminar on homemade baby food. Something bout steaming something and storing??? Damn I need to google this as I cannot remember.

    It sounds like putting spinach in your smoothie (pureed) is more dangerous than eating freshly picked or frozen. Soil fertilized with nitrogen fertilizer and post harvest storage damage seem to be the major culprits in raising the nitrate levels.

Than you very much! :noway: I mean really what would happen if the sodium in my diet will mixed with the nitrates in my salad there by forming sodium nitrate. :sad: Sodium nitrate is a compound used in the manufacture of fireworks and rocket fuel... :sick: I've been fortunate so far but you just don't know about these things... I mean really that just one spark could result in flames emmanating from my buttocks sending me into orbit. :explode:

    Sorry, but when Mom and I buy green veggies, we always wash them before we even start cooking with them. I love my broccoli, spinach, okra, lettuce, collard greens, cabbage, and kale. All of these things have low carbs and good potassium and have been crucial in helping with my weight loss. :smile:
