Low Fat High Protein Meal: Chicken Pozole!

This soup is great for breakfast or dinner! I use to always get this for breakfast at our local taqueria but tonight I made it for dinner- sooo good!
4 cups diced chicken (I cooked the chicken first)
29 ounces hominy (this was one can)
19 ounces medium enchilada sauce (again, one can)
1 red onion diced
2-3 cups diced cabbage
salt to taste
In a pot place all of your chicken. Cover with desired amount of water for your soup. Bring to boil. Add hominy and enchilada sauce, cook for about 20 minutes.
Add half of the red onion, cook through. Add salt to taste.
Once the red onion has cooked, spoon your pozole in your bowl. Top with cabbage and more uncooked red onion. You can also add lemon!
