I love love love avocados! I have four that are finally ripe and now I am torn on how to prepare them. What are some of your favorite avocado recipes?

I personally love Avocado Sandwiches.

9-grain bread
Avocado (sliced or mashed your choice)
1 slice of White cheddar cheese
Lettuce
Tomato
Spicy Mayo
YUMMMM!

    Can't beat fresh avocados!
    I like to eat them with salt and lime or I mash with a drizzle of olive oil, lime juice, salt and minced garlic

    I like to toast an english muffin, spread avacado on both sides, sliced turkey breast, top with a slice of cheese, then broil just until cheese melts.


    I also dice green onions, tomatoes, and stir into my mashed avacado for a fresh guac.

    I chop into small cubes the avocado, dust with salt and pepper, then throw it into a small bowl with a can of no name spicy thai tuna. Delicious. Other times I'm content with slicing them and putting them on a slice of whole wheat with a little bit of mayonnaise.

    Avocado Chocolate Pudding.
    1 ripe avocado
    1/4 cup cocoa powder
    1/4 cup raw agave nectar
    1/4 cup almond milk
    1 teaspoon vanilla extract
    Peel and quarter a ripe avocado.
    Put all the ingredients in your beloved Magic Bullet (or a blender/hand mixer) and blend until smooth.
    Serve and enjoy!

    I love fresh pico de gallo (finely chopped tomatoes, onion, jalapeno, and tons of cilantro) mashed up with avocados. I can (and do) eat it by the bowlful.

    I also like avocados in a breakfast salad, cubed, with chopped tomato, shredded prosciutto, grated cheese, basil, salt and pepper, and poached eggs.

    I just finished making and eating Salmon and Avocado Lettuce Wraps for lunch. They were pretty tasty!

    Ingredients:
    1 (7 oz) can of salmon, drained and bones removed
    Half of an avocado, skinless and seedless, chopped
    1 medium celery stick, chopped
    1/4 of a field cucumber, chopped or diced
    Dash of black pepper
    Lettuce leaves of your preference (I had iceberg on hand)
    1 tbsp of walnut pieces
    2-3 tbsp of plain, unsweetened greek yogurt

    Makes approximately 3 servings, depending if you have something on the side.

    Directions:
    Mix and mash everything but the lettuce together. Add mixture to lettuce leaves and roll up!

    Tuna stuffed peppers.
    i take a can of tuna...mash in avocado...add a few walnuts and shake or two of garlic salt. Stuff a red or yellow pepper. Delicious!

    Lately i have been having avocado with some fresh salsa (like tomatoes and onions that come in a jar) and some black salsa chips or even avocado and cottage cheese.

    I need some new things lol

    sliced with cumin sprinkled on.

    mashed and wrapped in a whole grain tortilla with different toppings (onion, black beans, tomato, peppers, mushrooms) with a little chipotle tobasco sauce

    used in place of mayo on a sandwich

    good old guacamole

    on a breakfast sandwich, bagel thins with egg cooked hard, some cheese and avocado slices

    Guacamole!!!! Or mix with good lump crab meat (from the cold fish section) and eat it like that. So amazing.

    yum! i made these and put it in popsicle molds and put it in the freezer. :)

    today i had a double chicken salad with all the veggies from subway and i took my own avacado, diced it up and put in on top was soooooo tasty

    Have avocado for dinner. I just have a cup of cottage cheese, diced fresh tomato, and a cubed avocado. Little pepper, no salt, to taste. Yummo :)
