    recipe makes 4 servings
    2 ripe plantains (yellow and black skin), peeled and cut into 1 inch rounds
    1 (20 ounce) can pineapple chunks in juice, drained, juice reserved
    1 teaspoon ground cinnamon
    3/4 teaspoon ground nutmeg
    3/4 teaspoon ground cloves

    Directions

    Heat a large skillet over medium heat and coat with cooking spray. Arrange plantain slices in a single layer. Season with half of the cinnamon, nutmeg and cloves. Cook until golden brown on the bottom, 2 to 3 minutes. Turn over the plantain slices and pour in the pineapple and a small amount of the juice. Sprinkle the remaining spices over the top and continue to cook until browned on the bottom, about another 3 minutes.

    The recipe calls for a whole can, but you don't really need to use the whole can.

    We sub out the chicken for tofu (since my partner is vegetarian and I limit my meat), which cuts the fat and cholesterol. But lean pork or skinless boneless chicken are also good choices. You can ditch the rice, or switch it out for brown rice, if you want to cut the carbs/refined carbs as well. If you choose tofu, coat it lightly in about 1 Tbsp of cornstarch and lightly "fry" it til it's brown -- we like that better than just plain tofu in this dish.

    I almost forgot, we make pineapple wrapped in bacon. It's like scallops wrapped in bacon but with Pineapple instead.

    Get a sponge mix and layer them on the bottom of the dish ( with the juice) and pour over the sponge mix. 20 min at med heat. Louverly treat :)
