Thai soup with turkey meatballs and spinach
Thai Soup
2 boxes of chicken broth
1 paquet ground chicken or turkery
1 large onion sliced
3 cups of spinach
1 cup of celery
4 pieces of garlic things that you crush (the name has left me lol)
A bit of grated ginger
1 teaspoon (t) of onion powder
1t of garlic powder
2 t of hot pepper paste (or something like it)
Salt and pepper to taste
1 t thyme
½ cup cilantro (chopped)
Meat:
Mix meat with thyme, salt, pepper, onion powder, garlic powder and a bit of hot pepper paste. Refrigerate for at least one hour.
Soup: In a large pot, heat a bit of oil and cook turkey. I don’t bother making balls. I just cook it and leave it stick together and when it’s almost done I kinda cut it in little chunks…..
Once meat is cooked add onions… then celery (and any other veggie you want).. wait a bit and then add chicken broth. Finally add spinach and cilantro, garlic, ginger, hot pepper paste and cook for about an hour

This sounds delicious! What type of broth did you use (brand, how you made it. etc.). I find chicken broth is always too high in sodium so I have to lay off.0

I am not too concerned with salt..
but you could use the 30% less sodium one. I just used no name chicken broth.0 -

It is actually pretty yummy. The secret ingredient is hot pepper paste so dont skip it. I found mine at the dollar store.0
