    Hi,

I also do not have instant oatmeal in packets, but regular rolled oats....what is the measurement of the oats?

Ok, so I made these this morning, with 1 cup rolled oats, added a scoop of vanilla protein powder, and 1 teas of pumpkin pie spice. I made 6 cookies. The recipe calculator says they are 78 calories each. I packed one in my lunch today and will see how it is later and if any "tweeks" are needed.

    thanks for posting this!

never heard of pureed pumpkin before any ideas what else could be used?? thanks

I've used it in brownies and cake mix in place of oil.

I wonder if this recipe would work with applesauce instead. I'm out of pumpkin... I had an open can and gave it to my cats and dog. Keeps 'em regular. :blushing:

Will need to try in brownies.....we use a lot of pumkin puree...for our pets as well. LOL

How did you do it with bananas? Just mash them up, and then cook them in the same way as the pumpkin recipe?

I was just about to post the same thing. Pumpkin pie filling has egg, sugar and spice in it.

Hmm...do you think this would work with canned yams instead? I kinda hate pumpkin and banana so I'm on the lookout for baking alternatives.

Try these too, for a protein bump, (I sub pumpkin puree for bananas)

    Ingredients
    ~ 2 Medium Ripe Bananas
    ~ 1 Cup of Oatmeal
~ 1 Scoop of vanilla Protein Powder

    Directions
Mash your peeled bananas in a bowl with a fork ~ mash well! Add in the scoop of protein and keep mixing. Depending on how ripe your bananas are, you may need to add a few drops of almond milk or water to make your dough the right consistency. Lastly, mix in the oats.
Use a spoon to drop the dough on your cookie sheet ~ be sure to coat it with non-stick cooking spray ~ and lightly press down to flatten. This helps it bake better!
Bake at 350° for 15-20 minutes or until golden brown! If they are still a little mushy, just bake for a little bit longer.
