Stuffed Portobello Mushrooms

I bought some nice looking Portabella at the commissary this morning and was planning to stuff them with a mixture of green and yellow peppers, brown rice, green apples and maybe black beans (it was a work in progress.) And then my husband informed me that what seemed amazing in my imagination sounded 'gross'. (I suspect it was the apple that threw him off, but i thought a little tart sweetness would brighten the whole thing up. I may be wrong.) Normally I'd hand him ten bucks and tell him to go feed himself but he did recently dispose of all of his pop, join MFP to support me, and has done about half my workouts with me; if he can do that I can stuff these mushrooms with something he likes, right?

So long story short (too late, lol.) what are your favorite stuffed mushroom dishes? I did an internet search and once you weed out things loaded with cream cheese the results get sparse. Or, I suppose, recipes not calling the stuffing of the portabellas will work as well. We eat anything (except I don't like cream cheese) and everything, so don't hold back.

    I think my favorite thing to do with portobellos is to use them for mini pizzas. Clean and then Bake them at about 350 or so for 10 minutes, then add your pizza toppings and broil until cheese is melted/bubbly or just continue baking until heated through. Pizza topping options are up to you and your hubby.

    My favorite stuffed mushrooms are the ones that aren't low cal, though. My sister made some at Christmas that used the stems chopped fine as filler, bacon, onion, cream cheese(could use other soft cheese), garlic. I also think using browned ground turkey or chicken might work in place of the rice or beans you have listed?

    The other night I grilled them with carmelized onions and garlic and ate them like that. I think you could stuff them with the peppers and rice and maybe zuchinni? If you like mozzarella it would be good on top i think, and hold it all together.

    I wish our comissary had groceries other than beer, chips, and soda! jealous!

    I like to grill the caps with a little balsamic italian dressing and parmesan cheese (tomatoes on the grill this way are also really good). Not really "stuffed" per se, but so good I haven't even tried them any other way.

    Now that I'm thinking about it, though, maybe some kind of crab or shrimp filling might be really good (and relatively low calories).

    Ah, I think the ground turkey may work. Adding some meat would probably get him back on board. In place of the beans, and also scrapping the apple...

    I think I'm gonna try a mini pizza for sure for lunch though, since I picked up a few. Sounds delish.

    Oh! Crab! Mmm...maybe one with crab and one with turkey, to save myself the hassle of making a choice. :love:
  • Mmm, love the mini pizza idea, I'm going to try that!! I've been trying to think of something to take place of pizza crust!

    (A little suggestion from an old married woman: Do not reveal ingredients to your husband before he tastes the product! And maybe not even afterwards! LOL )

    I stuffed mine with vegetarian pulled 'pork' (aka barbecue tofu) and it was really, really good, so I imagine you could stuff it with real bbq pork!

    I stuff them with either a combination of finely chopped zucchini mixed with a laughing cow cheese wedge and some chopped onion/garlic or with spaghetti squash and pizza sauce with perhaps a little bit of cheese (laughing cow, Parmesan or light mozzarella). Yum, I make them all the time and then have the leftover ones cold for lunch. I put them in a foil packet and bake for about 25 minutes at 350.

    I use them to make "pizza" about once a week. Last night I tried something new! I put a tablespoon of basil pesto in each (baked) portabella, covered with some spinach (sauteed with garlic in Pam), then covered with about 1/6 cup mozarella, i baked it a little while longer to melt cheese. They were super tasty!
  • I just put a sliced tomato on top and sprinkle some kind of cheese, like parmesan, on top. so easy and delicious, and i don't have to cook any other nonsense like rice or beans :)

    Soy chorizo. Trust me on this. I like Trader Joe's brand the best. Its meaty tasting, has amazing flavor, and is easy on the calories. Sautee some onions peppers & garlic, add in some spinach and the chorizo -I put some kind of lowfat cheese in too, but you could just omit that and maybe use a bit of rice or something. I add a couple Tbs of parm, too. Stuff & bake. So so SO good.

    I like to scoop out the insides some, finely chop up the stems and start with that to stuff them. I'll saute that with some spinach, chopped zucchini, onions and garlic. Add a little bread crumbs and Parmesan cheese, and throw them on the grill.
