Crock Pot Fiesta Chicken
3 large chicken breasts (frozen is ok!)
2 14.5 oz cans stewed tomatoes
1 11 oz can white corn
1 14.5 oz black beans rinsed and drained
1/4 cup taco seasoning
1 tbs. chicken soup base
Mix all the ingredients in your crockpot, add the chicken last,for ease for mixing, place on high for about 5 hours (around 8 on low). About half an hour before you are ready to eat, take two forks and shred the chicken. About 6 servings when finished at about 300 calories each. Eat it as is, or serve over rice, in tortillas, or on a salad. Yum!

I am looking forward to trying this recipe. My husband isn't a fan of stewed tomatoes, so we are trying with Rotel's diced tomatoes with lime juice and cilantro. I hope it turns out as good as yours does.0

I do crock pot cooking every week end. This will be the next one.

Sounds good. Whenever I do meat in a crockpot I always brown it to seal in the juices.
I've been canning my own tomatoes for years, so I'll go that route.0 -
