    Im thinking we are going to have what we call "star tacos" .. its just taco salad (star because the shells look like stars). We bake our shells and use spray oil, so they do not have all the fat as a deep fried one.

    Skinny Chicken Pesto Bake

    Ingredients:

    2 (16 oz total) boneless, skinless chicken breasts
    salt and fresh pepper to taste
    4 tsp Skinny Basil Pesto
    1 medium tomatoes, sliced thin
    6 tbsp (1.5 oz) shredded reduced fat mozzarella cheese
    2 tsp grated parmesan cheese

    Directions:

    Wash chicken and dry with a paper towel. Slice chicken breast horizontally to create 4 thinner cutlets. Season lightly with salt and fresh pepper.

    Preheat the oven to 400° F. Line baking sheet with foil or parchment for easy clean-up.

    Place the chicken on prepared baking sheet. Spread 1 tsp of skinny pesto over each piece of chicken.

    Bake for 15 minutes or until chicken is no longer pink in center. Remove from oven; top with tomatoes, mozzarella and parmesan cheese. Bake for an additional 3 to 5 minutes or until cheese is melted.

    OH out this evening, so I had half a roast veg pizza and loads of salad - came to just over 400 calories and will have the rest for lunch tomorrow. Been craving pizza for a couple of weeks now so was very welcome!

  • 2 fillets of baked haddock and a cup of fettucini alfredo with fresh veggies on the side. Which I had to choke down while watching my wife and daughter eat pizza, and they picked off the friggin' pepperoni and threw it out, which almost made me cry. Would it be wrong to dig the pepperoni out of the composter and just lick it? Maybe eat just one?

    Chicken soup:

    one chicken thigh no skin
    2-3 cups homemade chicken broth with all the fat skimmed off
    1/2 cup carrots
    1/2 an onion
    1/2 cup celery
    4 cups fresh baby spinach


    Add everything together and it's AWESOME chicken soup!

    Probably soup, I had Subway for lunch. I'm hitting the recipes here and they are awesome just now need to cook! :)
  • Chicken cacciatre (from scratch) with boneless skinless chicen breast, green and red papers, mushrooms, onion. And little bit of bread.
    First time cooking this, and I can say it was a hit ;-)

    topped with walnuts

    and the green beans on the side

    and left over pork loin
