Apple Cake ONLY 2 WW points!

This is my fav, so low fat, a great way to use those bags of apples that are such a great deal and it definitely satisfies the carb-lover in us all. Just try and not eat the whole pan!

1 ½ cups whole wheat flour
½ tsp baking soda
½ tsp cinnamon
1 dash salt
½ cup sugar
2 egg whites
3 small apples, peeled, cored and chopped
¾ cups unsweetened applesauce
1 tsp vanilla

Directions: Combine ingredients and bake in a sprayed pan for 15-20 minutes at 350º. Makes 12 slices.

    I use a standard rectangular cake pan. You can make it in any size pan (smaller would be nice if you want taller slices - these are on the thinner side like brownies in my pan) just continue to slice it in 12 and it will be the same calories/pts.

    It rises about 2x its original size so it’s like almost an inch when I spread it in a rectangle pan (so that’s kind of thin – it’s a big pan) and ends up being 2 inches in the end.

    I just made this again this morning (along with Mango Nut Bread only 3 WW points but FYI that one sucked, too dry) and I love my apple cake!! Soooo goood! I love "eating" Saturdays! I weigh-in Saturday morning and then allow myself 2500 calories for the day then back to my regular 1200-1400 days.
