HELP WITH 100% WHOLE WHEAT BREAD RECIPES

I just started making my own sourdough bread. I am looking for good recipes using one or more of the following grains....wheat, flax, oatmeal, etc..... It can be "wheat" or "wheat + oatmeal" or "wheat + flax" or "wheat + oatmeal + flax" or anything you can think of that use whole grains. I am trying to avoid adding any kind of sugars to the bread including honey. This may not even be possible to do and still be edible. I might be in over my head but I really would appreciate and help I can get.

I've used this recipe myself and they are really good, but without sugar? I don't think they would be edible at all. Anyways I recommend them, even my kids eat the bread. They are a little heavier than regular bread but they are satisfying, Each bun has 108 Calories; 1g Fat; 5g Protein; 20g Carbohydrate; 4g Dietary Fiber; 13mg Cholesterol.

You need the honey or other sugars to feed the yeast, that's what makes it rise. I used to mill my own flour before we went gluten free and all of our bread (as well as pancakes, muffins, cookies, etc) were nothing but wholemeal flour. In quick bread you can get away with going sugar free (though it will impact the flavor) because the baking powder or baking soda will cause it to rise without the need for it. But with yeast bread, you're taking away the food the yeast thrives on. I don't think any of my recipes are completely sugar free. I think I recall a French bread recipe that was sans sugar but I'll have to look and see if I can find it.
ETA: I just googled "yeast bread without sugar" and had quite a few hits. You might try that. I'm not going to since I'm gluten free and can't eat it anyway but good luck!0 -
I just recently started to bake my own bread in order to be healthier and save some money. This one turned out pretty yummy:
http://allrecipes.com/recipe/100-percent-whole-wheat-bread/detail.aspx
It's whole wheat and has only 1/4 cup honey for 2 loaves which is not a lot. It has add-ins like flax, oats, quinoa, seeds. My husband and me really liked it.
A slice of bread came out to be around 80 calories (I weigh the loaves and the slices to get accurate calorie count).0
