How much oatmeal do I measure out if I'm just using rolled oats instead of the oatmeal packets?

 Great idea! I must try.
  • I came up with this after watching Hungry Girl use pumpkin puree to make Muffins. A this point in the month instead of going to the store, I try to make everyone use up what we already have. In this case I have lots of Instant oat meal and a left over can from the Holidays. Perfect! They turned out pretty darn good, and were picky eater kid tested.

1 Packet of Quaker Instant Oat Meal. ( I used Weight Control Maple & Brown Sugar for this one, any flavor will do!)
1/2 Cup of Libby's Pureed Pumpkin.
    1 Tbsp Water
Scoop out into 1 Tbsp piles and mash them down a little.
    Makes 7 mini cookies
    29 Cals per cookie

350 for 25 mins. I did these in the Toaster oven set on bake. Seriously.

I didn't this time, but you could add in whatever you'd like, and use whatever flavor of oatmeal you have or would like. Raisins, Dates, Cinnamon or even a little nutmeg would be very good.
Feel free to add in any variations on this. I just used what I had on hand.

What a good idea! I might have to try this... Thanks!

PS-- Your plate is really cute. :)

how many grams are in one packet of oatmeal? I only have a big box.

    anyone?

Each packet is 38 g according to the package and I just measured it - 1/4 cup

I just tried these but added 2 Tbsp of sunflower seeds and 1 Tbsp of chocolate chips, making 8 cookies instead of 7. This brought the calorie count up to 43 but they taste pretty good and are a nice treat with nutrients I am looking for.

In each cookie, there are 2 grams each of protein, fiber and fat, with more than half the fat coming from the sunflower seeds. I am always looking for ways to increase protein, fiber and good fat.

Thanks again for sharing your recipe.

I have one of those silicone baking mats too..that'd save on 'greasing' the cookie sheet!

I used a baking stone - no greasing on that either.

Sounds good! I wish MFP had some way of letting us "tag" threads for later viewing in folders (so I could file this under "recipes")

    Until then...BUMP!
