I am running recipes from Americas Test Kitchen Lite Cooking series, so far they have been quite good
I made chocolate chip cookies (for desert) that are 120 cal vs. 290 cal for a standard recipe, the kids can't tell them apart.
Dinner is a TexMex Quinoa and Rice mix with chicken, some chia seeds dumped in as well. With that a tangerine and blackberry fruit cup, herb salad with vinaigrette dressing, and a piece of low-cal nan bread.
Total cal's is about 420 the way I make the above and is very filling.0 -
Grilled Cheese made with 45 Calorie Multi-Grain Bread, 2% Cheese Slices, and I Can't Believe It's Not Butter.
Broccoli, grapes, and scrambled eggs. Yum.0 -
Salad, salad, salad - to compensate for 4 pieces of fudge this afternoon.0

Salsa chicken in the crock pot. Chicken, can of black beans, huge can of salsa, and spices. Yum!0

Jerk Chicken drumsticks with a little rice and peas, garden salad and lots of green beans too0

Leftover pork roast, unsweetened apple sauce, low fat oven fries and peas. Quick dinner needed tonight.0

Left-overs: lasagne with meat sauce. Calorie bomb, but delicious. Only having a half (or so) serving tonight. Last night had a full serving, 1-1/2 glasses of pinot noir, and a Caesar salad (and a little bread). Nearly 1000 calories for everything, but so good! No wine tonight, either. :grumble:0

Sounds gross but was super delicious: (all in one bowl) sweet potato fries, grilled chicken breast, sauteed onion and bell pepper, plain greek yogurt, onion and herb flavored mrs. dash, and crumbled turkey bacon!0

Ground turkey stuffed red peppers including lots of vegetables and sauteed broccoli rabe. Fresh, organic strawberries for dessert. Everyone else's dinner sounds so good! I can't have dairy or wheat, so it's a little limiting, but I am focusing on what I CAN have and it's amazing how creative I can get.0
