Just made these with fat free cheese and egg white. About 18 cals with the modification.
SO DELICIOUS!!! I had to contain myself to resist devouring them all. My husband loved them too!

Made these today and they are quite good. I made a few modifications...I doubled the batch (well, only made it to 20 servings in my mini cupcake pan :P) but used one full egg and one egg white, added extra onions, used low salt StoveTop stuffing (instead of bread crumbs) and added a bit of garlic powder. I put the zucchini in my salad spinner so it was nice and dry before starting.
I was going to put in a bit of sauteed spinach but I forgot.

I've done zuchini parm instead of chicken or eggplant parm....make it in a cake like patty, bake it, add marinara sauce & sprinkle on some parm, yum!0

I made these last night, but in full-blast muffin form because I didn’t have any mini muffin pans. They were AMAZING! It took a lot of will power for me to not eat all of it. If you use a regular muffin tray, they fill about 6 of them halfway, or 3 full ones.
Thanks so much for this recipe! I am going to be making them again for breakfast this weekend. I would like to get a mini muffin pan to really tot it out.
