    1 lb. boneless skinless chicken breast or Tenders cut into 1 inch chunks
    1 T olive oil
    1 3/4 C chicken broth I sue the low sodium stock in a box
    1 C salsa
    3 garlic cloves minced
    2 t cumin ( i use more)
    1 can (16 oz) of white beans rinsed and drained
    1 C frozen whole kernel corn
    1 large onion chopped

    Directions
    Brown the chicken in the olive oil
    after the chicken is browned add it to the crock pot with other ingredients. Cover and cook on low for 8 to 9 hours or on high for 4 to 5 hours

    I add home made fiesta salsa and 1 can of chick peas and a can of white beans and 1 lb bag of frozen corn. When it is about 1 hour from being done I add fresh spinach leaves too

    If made as directed the nutritional info is as follows
    Calories 234
    Total fat 5 gm.
    Sodium 675 mg. ( this is why I use the low sodium broth)
    Fiber 8 gm
    Carbs. 25 gms
    If made as directed without adding anything else it feed 6

    Cashew Chicken

    1 103/4 oz can condensed golden mushroom soup
    2 tablespoons soy sauce (use reduced-sodium, if desired)
    1/2 teaspoon ground ginger
    1 1/2 lb. chicken tenders
    1 cup sliced mushrooms
    1 cup sliced celery
    1 cup shredded carrots
    1 8-oz. can sliced water chestnuts, drained
    1/2 cup cashews

    Combine soup, soy sauce, and ginger in the slow cooker. Add rest of ingredients except cashews. Cook on low for 6-8 hours, or on high for 3-4 hours. Stir in the cashews. Serve over hot rice.

    6 servings. 253 calories, 9 fat grams, 15 carbs, 31 protein.

    put 1lb chicken breast at bottom of crock pot

    sprinkle with
    1/2 tsp black pepper
    1/2 tsp oregano
    1/2 tsp basil

    cover with a jar of spag sauce

    cook on low for 5 hours

    serve on pasta

    top with slice of mozerella cheese

    I just invented this one tonight. All it needs is some fresh cilantro and that would make it perfect. I call it Tex Mex Chicken.

    Tex Mex Chicken

    ingredients:
    2 boneless skinless chicken breasts (mine were 28 oz altogether, and is what I base the nutrition content on)
    1 cup your favorite salsa (I used Pace chunky medium salsa)
    2.25 cups black beans (I had leftover black beans from cooking them the other day, so I measured and tossed them in)
    1 cup frozen corn (not thawed)
    1/2 teaspoon cumin
    1/2 teaspoon chili powder
    salt (to taste)
    pepper (to taste)

    Place chicken breasts in crock pot and pour salsa on top. Cover crock pot. Set on low and cook for 2 to 3 hours, or however long you need them to. Shred chicken, add beans and corn and spices to shredded chicken and salsa. Stir until mixed, then cover and cook on low in crock pot. Serve over rice or in soft taco shells. Garnish with diced fresh tomatoes. Shredded cheese and low fat sour cream would be good. I will use the leftovers to make burritos and freeze them for a future meal.

    Makes 5 cups.

    Calories per 1/2 cup serving: 158

    Only my really picky 17 yr old son wasn't thrilled about the dish.

    It's not diet food by any stretch, but I love doing an oxtail stew. I've also subbed out the oxtails for a pot roast. My recipe is spicy and aromatic, like Caribbean Jerk type seasonings. Usually oxtail stew isn't done spicy but I'm a chile-head so I did more of a jerk style.

    in a skillet, brown a pot roast/oxtails in some oil on all sides, sprinkling with salt and pepper, til a good crust has formed.
    put it in the crock pot:

    Add to the pan drippings
    1 large onion, diced
    2-3 good sized carrots, sliced up
    1 bell pepper, sliced
    a 1-2" piece of ginger grated
    optional- chile peppers such as Scotch Bonnets, if you want it more jerk style. I've used up to 6 Bonnies in this recipe, it'll light you up if you are not used to it. 1 would probably be more than enough for a lot of people or you could sub out a mild chile like a jalapeno. Dice up the chiles however you like, I kinda go for a finer mince so it incorporates throughout the sauce.
    Cook it for just a couple minutes, mainly to get the tasty bits from the meat out of the pan and to get a sweat going on with the veggies.
    Take a beer and pour some into the pan to deglaze, and then add the veggie mix onto the meat in the crock pot.

    At this time add:
    1 TBS dry thyme
    1 TBS ground allspice
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg

    the rest of the beer
    1tsp browning liquid (like kitchen bouquet)
    a little more salt and pepper

    Give everything a good stir, put the crock pot on high and let it do it's thing for a few hours, until the meat is tender and nearly falling apart. Stir it occasionaly and test the seasoning.

    Take a small bag of frozen lima beans and toss them in and let it go for another half hour or so, till they are cooked but not mushy.

    You can serve it with rice, or a more traditional peas and rice, or anything you like to soak up the gravy.

    Any kind of seasoning you want.

    1) Put chicken breasts in crockpot, and fill enough water to slighty cover all the chicken breasts.

    2) Put as much seasoning as you want. I use Ms. Dash seasonings and anything with no salt.

    Cook on low for 6 hours.

    Take all chicken out and shred it up.

    That's plenty of chicken to eat for the week in many different ways. You can eat it over rice or noodles, or you can make a sandwich or wrap with it. It's a great way to cook chicken breast.
  • frozen chicken breasts, dump salsa on top and cook on high for 3-5 hours depending on your crock pot. My crock cooks quick so it only takes 3 hours but my old one was more like 4-5. When done I shred up and dump a can of black beans in and put on low for like a half hour or so until they are heated up. I like to make a chicken taco salad topped with gucamole and light sourcream and cheese on top of a few cups of spring mix. No dressing needed. If I have some extra calories I might have it on a tostada instead.
