carrot and coriander + tomato and basil soup recipies

carrot and corriander
1 large red onion (diced)
5 carrots (thinly chopped)
1 teaspoon of corriander
pinch of garlic
grated ginger
2 vegtable stock cubes
750-1000ml of water
leave to simmer for 45 minutes. Use hand blender to liquefy.
tomato and basil soup
1 pack of cherry tomatoes or 4 large tomatoes (diced)
pinch of garlic
1 teaspoon of basil
2 stock cubes
750ml of water
leave to simmer for 30 minutes. The flesh breaks away from the skin and the soup becomes creamy so no need to blend. use almond milk to turn it into cream of tomato.
