A large fruit salad with rainbow colored fruits and home made carrot-red pepper-beet-grapefruit-orange juice. Stuffed enough calories for lunch today, so going light tonite.0

Chicken dumplings with carrots, onions, celery and potatoes. Boneless chicken thighs and dumplings, slow cooked. Awesome flavour, tons of veggies, and best yet, my wife made it so it was waiting for me when I got home from work.0

2 cups whole wheat spaghetti with 1/2 a cup of tomato sauce, and three turkey meatballs.0

Turkey meatballs with some veggies roasted in olive oil. I tried to make the veggies like the ones at Macaroni Grill that come with the Spiedini dishes. They didn't turn out exactly the same, but still pretty yummy!0

Aw well thank you. It was quick and has lots of protein in it. I just am AMAZED by the creative, healthy dishes people on here make.. I'm nowhere near their level.0 -
Pan-fried pork chops and Moroccan style couscous (Moroccan spices, thinly sliced carrot sticks, golden raisins, low sodium chicken broth)
ETA: I also have dinners planned out for the next two weeks. Tomorrow is an Ecuadorian style beef, potato and quinoa soup.0 -

Some fantastic ideas on here, thanks guys! A lot of the food is "Americanised" food, ie you can't get hold of a lot of the stuff at English supermarkets unfortunately0

raspberry chipotle chicken tacos! the chicken is in the crockpot while I'm at work!
Ohhhh recipe??
I don't really use a recipe, but here's what I do: I put some frozen chicken breast in the crockpot, add a few chipotle peppers in adobo sauce, then add water and cook on low for 6-8 hours. Once I get home from work, I remove the chicken and shred it. I strain the liquid left in the crockpot and put the shredded chicken back in. I take about 2 cup of the liquid that has been strained and blend it up with 3-4 chipotle peppers and add that back to the crock pot and let it cook on low another hour. When I'm ready to eat, I take the shredded chicken and mix it with raspberry chipotle sauce and makes tacos with whatever fixins I like!
The chipotle peppers in adobo can be found in little cans in the Mexican food section at most grocery stores. The raspberry chipotle sauce I find next to the mariandes and BBQ sauces, the brand I get is Fischer and Wieser. They're super yummy and even my fiance loves them!0 -
