My recipe is cod covered with a mixture of bread crumbs, butter, cheese, mushrooms and almonds. What can I substitute the bread crumbs, butter and cheese with ??

    I suppose it depends on what your goals are. If it's just to reduce calories, I'd be tempted to use panko crumbs, mix with a little grated aged parmesan to keep the cheese flavor at a low calorie cost, and spritz with cooking spray. But if not having crumbs is more important than calories, you could increase the amount of almonds, chopped/ground to the texture of crumbs.
  • Try blending old fashioned oats. I've also seen oat flour at the store if thats easier for you. Its the same thing though. I use that in place of breadcrumbs for all my recipes. I've found it to be a much better substitution.

    I second the panko and Parmesan idea :wink: You don't need a lot of panko to make a crispy topping and the cheese would give it enough flavor without adding butter. Just spray the crumbs with a bit of cooking spray to help them crisp in the oven.
