Thanks for the recipe! Sounds wonderful! I can't eat beef so this is a GREAT alternative!

I have used a recipe calculator to evaluate some of my recipes at: http://recipes.sparkpeople.com/recipe-calculator.asp I am going to have to plug it in. It will let you calculate how many servings you want from each recipe.

Thank you so much for the post!

Maybe try to start him out on sweet potato chips baked in the oven? I know there's a recipe floating around the recipe section. It appealed to me and I've never been a sweet potato person as the only ones I've even seen were covered in marshmellows. Once I ate the marshmellows that was it for me, probably 40 years back at my parents Thanksgiving table.

I did take one teeny bite of but it was so sweet I didn't care for it. I'm all grown up now, time to try them again.

I think the baked sweet potato fries (also a recipe for those) & chips have various seasonings on them so you just might be able to lure him into the world of sweet potatoes!

I love spicy sweet potato fries and have made them a few times but he doesn't like them. I've also tried adding them to meals he likes as well as bread products. He isn't a fan. He also doesn't like corn, squash, cilantro, onions, yogurt, grains, beans, most vegetables or anything else he considers healthy. I usually have to cook something seperate for him. :o(

I use red sauce, but I've heard it's really great with green sauce too. I would just use whatever you prefer. I'm going to try it with gree sauce next time I make it.
