get your favorite vegetables
parboil them.
mash them with an egg*
add some vegetables you don't want all mashed up
shape into burger shape
grill
I recomend potato, carrot, sweet potato and/or pumpkin as base
add legumes as well. chick peas are awesome. make sure they are already a bit soft for mashing
add some greens/colour like tiny broccoli flowerettes, corn kernels, peas stir these in after mashing so they have some shape.
sometimes I add a bit of chutney or some herbs for flavor. Usually I put the chutney on the outside after cooking
*egg helps them stick together. too much goo? add more veg or breadcrumbs. not enuf stick? add another egg0 -

I've made these and they are really good. They do contain egg whites. I made them with spicy black beans and spicy Mexican corn...yummy!

Black Bean and Mushroom Burgers:
1 15 oz can black beans, drained
10 button mushrooms, stem removed, sliced
1 egg white
1/2 tsp black pepper
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
salt to taste
1 cup whole grain bread crumbs
1/2 avocado
In a large bowl, add black beans and mushrooms, mash against the bowl with a potato masher or fork until all beans are thoroughly mashed. Add remaining ingredients and stir well. Shape bean mixture into 4 patties, put on a plate, cover, and refrigerate for 1-2 hours. Lightly spray bottom of skillet with cooking spray, heat to medium - low heat. Cook patties for approximately 8 minutes per side. Slice avocado and place on top of patties once they have been flipped.
I'm sure you could just leave the egg white out if that's a problem. It's just there to help with keeping the burgers together, which a couple hours in the fridge will do as well.0 -

Broil yellow pepper at 500 degrees on all four sides. Flip every 2-5 minute
Peels burnt skin off pepper
Toasted bun
Top with 0% fat greek yogurt mixed w feta (or blue cheese) and balsamic0 -
